Spring Soup and Sandwiches

Spring is upon us! We’ve already lost an hour of sleep and I’m starting to actually see a little sunshine this week so I’m really looking forward to planning day trips to the beach and to the mountains and even planning some weekend getaways with my future hubby.

Anyway, I just wanted to share with you my favorite quick and easy veggie soup and sandwiches which are perfect for springtime!


Spring Sandwich!


0.5 cup spring onions (white part, finely chopped)
1 number Tomatoes (finely chopped)
½ tea spoon black pepper powder
to taste Salt
1 teaspoon tomato ketchup
1 cup green spring onion (finely chopped)
2 teaspoons Butter
add lettuce pieces (cut into small pieces, 1/4 cup)
2 numbers bread (slice)


Spring Soup!


450 grams Carrots
2 Leeks
1 bunch Raddish
170 grams Spinach
2.5 tablespoons refined flour
60 grams Butter
1.5 liters Water
2 egg yolks
6 tablespoons Cream
to taste salt and pepper
