INGREDIENTS:
2 T. olive oil
2 tsp. ground cumin
1 tsp. ground coriander
1 tsp. hot paprika
1 tsp. ground turmeric
0.5 tsp. dried oregano
0.5 tsp. ground black pepper
0.25 tsp. chili powder
2 egg whites, slightly beaten
2 lbs. potatoes, cut into wedges
DIRECTIONS:
Preheat oven to 375. Prepare a large baking pan with cooking spray. Whisk together the olive oil, cumin, coriander, paprika, turmeric, oregano, pepper and chili powder into a large bowl. Place the egg whites in a separate bowl. Toss potato wedges first with the egg whites and then the olive oil mixture. Arrange the seasoned wedges in a single layer on the prepared baking pan. Bake in the preheated oven, turning occasionally, until crispy. (about 40 minutes)
