Veggie Burgers


2 c. cooked lentils

1 c. bread crumbs

3 egg whites

1 c. freshly cooked spinach, finely chopped

1/2 c. chopped onion

salt and pepper to taste

1 minced clove garlic

1 c. shredded cheddar cheese (opt.)

olive oil


Combine lentils with bread crumbs, egg whites, spinach, onion, salt and pepper, garlic and cheese, if desired. Shape into burgers. Chill for at least 2 hours. Cook in olive oil.

Serve with grilled Portobello mushrooms, a slice of sweet onion and tomato to make an open face sandwich.
