If you know me, you know I love a good quick and easy dinner plan! Mine and my fiancé’s schedule can get a little crazy at time with work and everything else we have to do so this is right up my alley!
The Parmesan Crusted Shake n Bake mix came with TWO pouches which was perfect for being able to make two separate meals. Vegetarian and Meat-atarian.
Prep Time: 10 Minutes | Total Time: 35 Minutes
Chicken Parmesan
What you need:
6 small boneless, skinless chicken breasts
1 pkt. Shake n Bake mix
2 cups of spaghetti sauce
1 1/2 cups of shredded mozzarella cheese
1 tsp. of dried oregano leaves
Make it:
Heat over to 400 degrees
Shake chicken with coating mix as directed on the package.
Bake chicken in foil lined pan 20 minutes or until internal temp in 165.
Top with remaining ingredients. Bake for 5 more minutes or until cheese is melted.
Eggplant Parmesan:
What you need:
1 large eggplant
6 tablespoons of unsalted butter
Shake n Bake mix
Make it:
Prepare the eggplant by washing it and trim off the green end.
Slice eggplant to 1/2″ disks.
Melt butter in bowl.
Place eggplant and butter in shaking bag. Add seasoning mix and shake.
Lay eggplant in a foil lined pan.
Bake at 400 degrees for 20 minutes or until tender.
Voila! A quick and easy meal for the whole family!
