As you saw in my last blog post, I’ve been a vegetarian for 14 years, here are some of my favorite snacks!
01: Tomato, Avocado Melt
I use whole wheat bread, slice some tomato and avocado and sprinkle some shredded cheese on top and throw it in the oven to help melt the cheese.
02: Eggplant Pizza Bites
Preheat the oven to 425. I just slice the eggplant and cover it in olive oil and Italian seasoning. Put some pizza sauce, shredded cheese and oragano on top. I put in in the oven for 15 minutes or until tender.
03: roasted parmesan broccoli
I don’t have a picture for this one but you slice the broccoli to about 1/2 thick. Toss it in some olive oil you put the on a pan and add red pepper flakes and salt and pepper. Bake on low for about 10 minutes then you add sliced garlic and put it back in for 6 minutes and you take it out and top it with parmesan and you can opt. for putting it back in for 2 minutes.
- 1 cup old-fashioned oats (raw)
- 2/3 cup toasted , sweetened shredded coconut
- 1/2 cup ground golden flaxseed meal
- 6 Tbsp mini chocolate chips
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 tsp vanilla extract
